Because the surname is generally accepted to be Hispanic I find this to be a plausible explanation. However, I can find no on-line reference to Spanish olive or oval shaped coins, nor one called an olivar (which may have been slang).

Elsewhere, bolivar is said to be a (Spanish) Basque place name meaning boli for 'mill' and ibar for 'meadow'.
