The surname Chalstrey originates from Cholstrey, a small village in Herefordshire, about 2 miles west of Leominster. This village is on the site of a Roman fort and its name is probably a corruption of Castra Ostorii, the camp of Ostorius, a famous Roman general who commanded the occupying Roman army and defeated Caractacus in AD51. In the local (Celtic) dialect Castra Ostorii became Caerostruy. It is mentioned in the Domesday Survey of 1086 as Cerlestreu and in later maps and writings as Chorlstree and Cholstrey.

The following alternative derivation of Cholstrey is given in a book of Herefordshire place names:

"Cholstrey SO4658 (Leominster). Perhaps "the tree of the free peasant".

Old English, ceorl + treow. It is possible that ceorl here is used in a collective sense and that the tree marked the boundary of a holding of free peasants."

This interpretation of the origin of Cholstrey seems to ignore or dismiss historical and archaeological evidence relating to the period of the Roman occupation.
