A Dictionary of English and Welsh Surnames (1896) by Charles Wareing Endell Bardsley

Of Flemish origin. The first of the name of prominence was Paul Crab, in Aberdeen, 1310. His seal bears a chevron between two fleur-de-lis in chief and a crab in base (Macdonald, 506). John Crab, Flemish engineer, came into notice at the siege of Berwick in 1319, when the stones discharged from his crane shattered the roof of the English 'sow.' In answer to a complaint by Edward II of England in that year Robert, count of Flanders, says that if he catches John Crabbe he will punish him on the wheel as he has been banished for murder (Bain, III, 673). Three records of payments to Crab are in ER. (1, p. 64, 81,398). He received from Robert I the lands of Prescoby, Granden, Auchmolen, and Auchterrony in Aberdeenshire for his services (RMS., I, App. II, 409). He also took part in the siege of Perth, 1332 (ER., I, p. 450). John Crab, perhaps a son, was burgess and custumar of Aberdeen (ER., I. p. 587,595), and in 1357 was one of those appinted to treat for the ransom of David II (APS., I, p. 517). John Crab witnessed sale of two crofts in Aberdeen to Ade Pyngil, 1362 (REA., I, p. 105,106). In 1384 John Crab, burgess of Aberdeen, granted a charter in favor of his son, Paul Crab (ibid., II, p. 286), and in 1398 appears as proluctor for William Cuk in same burgh (CRA., p. 371). Craibstone, Newhills, Aberdeenshire (in 1401 Crabistone) derives its name from the engineer. John Crabbe, constable of Berwick, 1331 (Raine, 433), was charter witness at Lamberton, Berwickshire, 1332 (BNCH., XVI, p. 327). Perhaps a different person from Crab of Aberdeen. Crayb 1528.
