From an Old Germanic language root, meaning 'person of the fields,' i.e. a farmer. The surname originates from southern Germany and Switzerland; many of the Geimans from those areas were Anabaptists who had their land seized and were forced to leave the country in the 17th and 18th century due to religious persecution. The Anabaptists resettled in the United States and formed communities that would eventually be known as the Amish or Mennonite.
