Alestan is Athelstan, the ancient personal name. An Alestan was a tenant in chief in co. Hants at the making of Domesday. The surname may, however, be local, either from Hailston, a burn in co. Stirling, famous for its blocks of jasper, or from Ailston-hill near Hereford.
This is hardly the same name as the Hallstein of the Landnamabok; but is more probably from Helston, in Cornwall, which Pryce derives from hal-las-ton, the hill by a green moor.
