From Where Does The Surname Originate? meaning and history
This surname is derived from an occupation. Probably the old 'Hayrester' or 'Hairster.' Halliwell says' Hayre, a garment made of goat's hair. Hayrester, a maker of hayres.' 'Hayresters, workers in horsehair' (York Mysteries, Toulmin Smith). Cecile in the Second Nunne's Tale was thus dressed: 'Under hire robe of gold, that fat ful faire, Had next her flesh, yeald hire in an haire.'
Again:

The hair garment was seemingly worn for mortification of the flesh by nuns and other religious persons. In the York Mysteries the 'Tumours, Hayresters, and Boilers' (i.e. Bowlers, makers of bowls) went together. Therefore the hairster may have also occupied himself in hair-stuffing of couches and saddles; a kind of upholsterer in fact, since the other two were undoubtedly engaged in wood-work.

Woulfe gives the Gaelic-Irish form of this name as Ó hOistir, but this appears to be little more than a guess on his part. According to Bardsley Hester is an English name derived from the Anglo-Norman estre, which means a street or town.
Perhaps John Estret of Co. Meath, who is mentioned in Archbishop Alen's Register under date 1504, may be an early form. Another name introduced in the Dowdall Deeds, which might possibly be a form of Hester, is Colrn Heycetir, provost of Dundalk in 1340-1. Neither of these is anywhere near Counties Mayo and Roscommon which is the part of the country associated with the name Hester in modern times.
