The word Holst comes from the German word, holz or the old Saxonian, holt, which means 'lumber', or in an older meaning 'forest', quite similar to the English word, wood.

The surname stems from the Northern German area of Holstein, called after the Saxonian tribe of the Holsten, or Holtsatians.

One family got their name after moving from Holstein to Denmark around the 17th or 18th century and therefore being called after their place of origin.
