Kit is a diminutive of Christopher, q.v., and cat is prob. a whimsical addition. Halliwell, in his Dict., gives a description of the boys’ game called kit-cat (apparently the same as tip-cat) and quotes Cotton (1734)— Then in his hand he takes a thick bat, With which he us’d to play at kit-cat. The famous Kitcat, or Kit-Kat Club was so called from the proprietor of the house, Christopher Kat (Katt, or Cat).
