This was a nickname applied to the Apostle James, who, according to tradition, miraculously appeared at the Battle of Clavijo and would proceed to massacre 60,000 Saracens (Muslims). This was then adapted by some as a surname for those fighting during the 'Reconquista' (Reconquest of Iberia).

'Moor' itself is a vague term originally referring to Mauretania, ancient Maghreb. The term hence meant 'Arab' or 'Berber', and was adapted during the Middle Ages to mean 'Muslim'.
