Meeson Surname Definition:
This surname is derived from the name of an ancestor. 'the son of Matthew'. This surname is quite beyond me. I can only suggest that as May, Makin, and Maycock (which see) represented Matthew, and as Makin and Maycock are generally found as Meakin and Mcacock, so Mee may be also a variant of May.

Meeson Surname Meaning
From Where Does The Surname Originate? meaning and history
There is no doubt that Matthew, through the Old French Mayheu, which was popularized in England, had many nick, forms, some of which are now obsolete. The favourite was May, and this would have variants. All this is corroborated by the existence of Mees and Meeson, corresponding to Mayes and Mayson. Circumstantial evidence, therefore, is entirely in favour of the above suggested solution.
1608. Robert Meese, Oxfordshire: Register of the University of Oxford.
William Mee, of March Croft, Lancashire, 1613: Wills at Chester.
Hugh Mee, 1615: ibid.
1642. Henry Meese, of Brockhurst, in Pennington: St. James, Clerkenwell.
1691. Baptised — Mary, d. Thomas Meeson: ibid.
Mee’s (Son) , Mee’s Son, v. Mee.
A parish in Shropshire, united with Bolas. It is stated to be a corruption of the Anglo-Norman name Malvoisin, or Mauvesyn. It probably bore some Anglo-Saxon designation in older times. On the acquisition of it by the Norman family, they gave their surname as a suffix, and the suffix in course of time supplanted the former name, as in the case of Latimers in Buckinghamshire which was origiually Iselhampsted, then Iselhampsted-Latimers, and finally Latimers.
For Mauvesin or Malvoisin (Lower). Berenger, Geoffry, Manasser, Peter, Ralph, Ranulph, Robert, Roger Malveisin, Normandy 1198 (Magni Rotuli Scaccarii Normanniae). This family is considered to have been a branch of the ancient Counts of the Vexin (Wiffen, Mem. Russell, i. 49). In 1070 Ralph Malvoisin, Sire de Rosny (who occurs as 'Malusvicinus’ in Suffolk 1086), gave lands to the Abbey of St. Evroult, Normandy (Ord. Vitalis, 604). Hugo Malusvicinus, founder of Blitheley Abbey (Mon. i. 468), appears in Stafford 1130 (Rot. Pip.); Henry Malveisin in Salop and Stafford 1165 (Lib. Niger). Gilbert M. was of Normandy at this time (Mem. Soc. Ant. Norm. viii. 266). Ridware Mauvesyn, Leicester, still bears the name of this family.
The Meesons possess the name of a Shropshire parish, and the Mugglestons have a name which suggests that of a township (Mucklestone) on the borders of Staffordshire and Shropshire, but whether these are mere coincidences or not I cannot say.
