Reaney, a reliable authority, while mentioning the English place-name, is of opinion that Mellis (and also Mellish, Malise and other spelling variants) derive from the Irish Maol Íosa (“tonsured servant of Jesus”).

From Where Does The Surname Originate? meaning and history

Mellows is stated by Barber to be a variant of Mellis, which, he says, is taken from a place in Suffolk or alternatively from the French personal name Mellisse. Reaney, a reliable authority, while mentioning the English place-name, is of opinion that Mellis (and also Mellish, Malise and other spelling variants) derive from the Irish Maol Íosa (“tonsured servant of Jesus”). This is found in the surname of the archbishop of Armagh (from 1270-1303)viz. Nicholas Mac Maoil Íosa. O'Dugan in his Topographical Poem names Mag Maoiliosa as chief of a district on the borders of the present counties of Longford and Westmeath; and O'Donovan in his notes thereto says that name is now obsolete there. Woulfe states that it survives in Scotland as Mellis and Malise. Certainly neither of these names occur in any modern records I have consulted; nor does Mellowes, which does not even once occur in the complete birth registrations of three consecutive years consulted, a fair indication that it is not a current Irish surname. Woulfe gives Ó Maoil Íosa as the Irish form of Mellowes, adding that this is apparently modern.

If Mac Maoil Íosa had been chosen in gaelicizing Mellowes it would have had some authority.

It is very doubtful whether this is a Gaelic-Irish name: there is an English name Mellows. In any is case the form in Irish would be Mac Maoil Íosa not Ó Maoil Íosa, the former being found in mediaeval records. SIF 112
