The Metz surname comes from the Hebrew מיץ, which means 'to press', from this comes the participles מץ, which means 'one who presses', hence 'oppressor'. In German, the Hebrew Metz was adopted for 'knife', which cuts by being pressed against an object. The messer, then, was the instrument which cut by being pressed.

As is common among Ashkenazi surnames, such as Katz, the surname Metz can also be an acronym for Righteous Teacher as the Hebrew Moreh Tzedeq (מורה צדק). Moreh, in Hebrew, meant 'teacher of Torah' and was the main function of the Levites. The Kohen (Priest) was from the family of Kohath and from the line of Aaron specifically. The Katz surname is also an acronym for Kohen Tzedeq (כונן צדק), Righteous Priest. These are two common names among the Levites and Kohanim of Ashkenazi descent.
