There are two possible meanings, the first being derived from someone who would have worked in a slaughterhouse, shoveling guts and offal from the floors. The other possible meaning might derive from 'King Offa' the Saxon, Mercian king of 8/9th century. He built Offa's Dyke, to keep the Welsh from attaching Mercian/Saxon farms and villages.
