Olivar or bolivar is an ancient olive shaped gold coin used in Spain. Olivares or Bolivares would be the plural of that. This definition is uncertain. Because the surname is generally accepted to be Hispanic I find this to be a plausible explanation. However, I can find no on-line reference to Spanish olive or oval shaped coins, nor one called an olivar (which may have been slang).

Elsewhere, bolivar is said to be a (Spanish) Basque place name meaning boli for 'mill' and ibar for 'meadow'.
