It is customary in Greek culture for priests to be called with their occupational title 'priest' followed by their given first name. e.g. a priest named John, would be called 'priest John' (in Greek that would be Pappagiannis [Pappajohn]). Low-rank priests in Greece are allowed to marry and have children, who they would be called using the genitive of their father's name e.g. 'Pappajohn's George'. Eventually, that would become a family's last name. Often the second part of the name would be dropped, leaving the last name shortened to Pappas. (Pappageorge, Pappajohn, Pappanick, etc would all turn into Pappas).
