This surname is derived from an occupation. 'the potager,' a maker of pottage, i.e. thick soup or broth, a favourite mess in older days. The intrusive 'n' is regular; compare Messinger and passenger, for Messager and passager.

From his knowledge of herbs the potager gradually became looked upon as a 'medicine man,' or herbalist (v. English Surnames, 5th edit).

A corruption of potager, 'a maker of pottage.' The intrusive n is quite regular, as in 'messenger' and 'passenger, for 'messager' and 'passager.' The surname appears in Scotland to have been confined mainly to Orkney and Shetland. Alexander Potyngeir and Thome Potyngeir were jurors on an inquest held at Sabay, Orkney, 1522 (REO., p. 95). Alexander Potinger was one of the witnesses to a deed of sale in Orkney, 1552 (Old Lore Misc., IV, p. 66). Peter Pottinger was retoured heir of Agnes Aitkin in lands in Sty, parish of Dunes, 1640 (Retours, Orkney and Shetland, 30).
