The word seems closely related to the Old French escuelle, a dish, but Professor Skeat (Etym. Dict., scullery) says the original form was sviller, from svill, to wash, passing from sviller to squiller, and as a habitat from squillery to scullery. 'The squyler of the kechyn' is mentioned by Robert of Brunne.

'The eleven messes to the children of the kechyn, squillery, and pastrey, with porters, scowerers, and turn broches, &c.': Ord. Henry VIII at Eltham.

We may add 'Roger de Norhamptone, squyler,' in Mr. Riley's Memorials of London. The French escuelle, a dish, if not radically connected, must have influenced the changes that have passed over the word. Amongst other gifts from the City of London to the Black Prince, in 1371, were '48 esqueles and 34 salt-cellars, weighing by goldsmith's weight, 76 lb. 5 oz.' (Riley's Memorials of London). 'Sergeant, squylloure' (Halliwell).
